Vegetatian Selections

A typical West African dish consist of a base component, usually a grain such as rice or other consolidated starch item, for example, yam, cassava, banana, sweet corn, etc. This base component is mixed with the sauce at the table at lunch of diner time. The sauce could be prepared from cassava leaves, potato leaves, jute leaves, or a vegetable extract such as egusi, tola, etc.

After preparation, the food is serve by spreading the sauce, such as potato leaf sauce, over the base component, such as the rice. Another approach to eating is to dip the base component, perhaps foo foo, into the sauce.

A vegetarian is a person who avoids meats, in general, in favor of vegetables, fish, and chicken. This is a somewhat general definition of a vegetarian. A true or strict vegetarian is one that adheres to total abstenance from meat, fish, chicken, and all foods that contain any amount of these foods (meats).

Therefore, the meaning of vegetarian depends on who you ask. Some vegetarians avoid red meat but eat fish and seafood or even chicken. Others abstain from all these and even dairy products.
